Olympia oysters are harvested in Puget Sound, Washington and Humboldt Bays, California and are the smallest North American oysters. These slow growing oysters are well worth the wait (and the price) for their robust flavor and mild coppery aftertaste. Despite their small size, Olympias have more flavor than others twice their size. |
